Allergy Friendly Naan Recipe from Sanaa
Sanaa is one of my favorite restaurants on Disney property, and one of my favorite things to order when dining there is the gluten free and allergy friendly bread service. In the past, the bread service was served with lentil chips or poppadoms, but in winter 2015, the restaurant started making their own gluten free and allergy friendly (and vegan) naan bread using Cup4Cup Wholesome Flour Blend.The Disney chefs shared this recipe with my friend Alexis from Alexis's Gluten Free Adventures, and after seeing it on her blog, I couldn't wait to make it at home in my cooking series, My Gluten Free Disney Kitchen.

Ingredients:
12.4 oz Cup4Cup Wholesome Flour Blend (must be the flour blend in the green bag)
.25 oz yeast
.65 oz sugar
.05 oz cream of tartar
.25 oz kosher salt
4.2 oz Chaokoh coconut milk
6.7 oz warm water (about 95 F)
*Please note: All measurements are weighed in ounces. It is recommended that the ingredients be measured using a food scale (especially dry ingredients).
At the end of this post will be a list of estimated measurement conversions for this recipe in cups and tablespoons.
Method:
Add the coconut milk to a mixing bowl, then add the flour, yeast, sugar, cream of tartar and salt, then add warm water.
Mix together with a dough hook on low speed until combined. Increase to medium speed and mix until the dough pulls away from the sides.
Increase to high speed and mix until smooth, about 5 to 8 minutes.Portion the dough into eight 3 oz balls.
On a flat work surface dusted with Cup4Cup Wholesome Flour Blend, roll each piece of dough into an oval about 1/4" thick.
Preheat oven to 500 degrees with a pizza stone or a sheet pan in it to cook the naan on. Cook one or two pieces of naan at a time on the pizza stone or sheet pan for 2 to 3 minutes, until lightly browned.
Brush with melted ghee, unsalted butter, or an allergy free butter substitute, and serve immediately.

Alternative measurements for dry ingredients:
2 3/4 cup of Cup4Cup Wholesome Flour Blend (must be the flour blend in the green bag)
1 - 1/4 oz / 7 gram package of active dry yeast
1 1/2 tablespoons sugar
1/2 teaspoon cream of tartar
1/2 teaspoon (or more to taste) kosher salt
Wet ingredients can easily be measured in ounces using a measuring cup with conversions listed (I used a Pyrex glass measuring cup which contained these conversions).
