Cuisine Classique Booth SignLocated near the Germany Pavilion is Cuisine Classique, another food studios booth that has two dishes that are listed as gluten friendly. The Red Snapper dish offered there sounded interesting, so we decided to check it out.Because this booth is NOT 100% gluten free, there is always an increased risk of cross-contamination. Use your own judgement when consuming items that are not in dedicated gluten free booths. Please note that there are no 100% gluten free booths at this year’s Festival of the Arts.Red Snapper from Cuisine Classique The Seared Red Snapper with braised Ratatouille and Lemon-Thyme Beurre Blanc is marked gluten free friendly; however, it does contain dairy. The Lemon-Thyme Beurre Blanc is made with butter. Because I've been re-introducing a bit of dairy back into my diet, I didn't check to see if the snapper could be made dairy free by omitting the sauce. I will double-check on my next visit and update the information here. The snapper itself was really well-cooked and not overly done. I will say that the fish was a bit salty, but otherwise, the tastes were very mild but flavorful. I wasn't as keen on the ratatouille which just didn't seem to be as balanced of a side dish as I would have liked. It was fine, but nothing special. The wine I ordered was the Campo Viejo Rioja Reserva Art Series -- a red wine that was extremely robust. It didn't pair well at all with the fish (the only other offerings were beer, which is not gluten free), and the wine itself just was a bit too strong for my tastes. I enjoy a hearty red on occasion but this one just didn't taste good to me. I'd skip it if I visited the booth again.Overall, I thought the offerings at the Cuisine Classique booth were just OK. I liked the snapper, but I'm not sure I liked it enough to order it again -- especially when I love the offerings at other booths, like Pop Eats!.What do you think of the menu offerings at the Cuisine Classique booth? What would you order?
