Magic Cookie Bar Recipe from Disney's Wilderness Lodge Resort

Growing up, my family used to make a decadent dessert for the holidays called, "Seven Layer Cookie Bar." Imagine my surprise when I learned years later that Disney makes the same dessert at it's Wilderness Lodge Resort, and calls it the "Magic Cookie Bar."

Of course, as a celiac, this has been off limits for at the Disney Parks & Resorts, but you can easily recreate this at home with simple and gluten free ingredients. I've also included instructions for how to make dairy free and vegan.

Recipe yields - up to 24 individual bars

Ingredients:

  • Butter, Vegan Buttery Spread, or Oil Spread (depending on preference)

  • 1 cup gluten free graham cracker crumbs

  • 1/2 cup butter or vegan buttery spread melted

  • 6 ounces chocolate chips (dairy free versions, if needed)

  • 6 ounces butterscotch chips (omit if making dairy free or vegan)

  • 1 cup flaked sweetened coconut

  • 1 14-ounce can sweetened condensed milk (or can of Let's Do Organic Sweetened Condensed Coconut Milk)

  • 1 cup pecan halves, chopped (or other preferred nut)

  • Optional: 6 ounces of M&M type candies (or No No's from No Whey Foods, if looking for vegan alternative)

Method:

  • Preheat oven to 350 degrees F.

  • Lightly butter or grease bottom of a 13×9 inch pan.

  • Sprinkle gluten free graham cracker crumbs in the bottom of the pan; combine with melted butter and pat into the pan to form a crust.

  • Cover crust with chocolate chips, butterscotch chips, and coconut.

  • Drizzle entire contents of sweetened condensed milk over pan, covering completely.

  • Sprinkle nuts evenly over contents.

  • Add optional ingredients, as desired.

  • Bake for 25-30 minutes, or until golden brown. Cool completely; cut into 24 squares.
