Cobb Salad Recipe from The Hollywood Brown Derby

This recipe is based on the one found in the Cooking with Mickey and the Disney Chefs (WDW custom pub) book. You can always adjust the recipe ingredients and amounts according to taste.I adore the Cobb Salad from the Hollywood Brown Derby, and I recently recreated this dish at home. Recipe yields - 4 servings

Salad Ingredients

  • 1 cup chopped iceberg lettuce leaves

  • 1 cup chopped chicory leaves

  • 1 cup chopped sprigs of watercress

  • 1 pound turkey breast, finely chopped

  • 2 medium-sized ripe tomatoes, peeled, seeded, and finely chopped

  • 1 avocado, peeled, seeded, and finely chopped

  • 1/2 cup crumbled gluten free safe blue cheese

  • 6 strips of bacon, cooked crisp, drained, and crumbled

  • 3 hard-boiled eggs, peeled and finely chopped

  • 2 tablespoons of freshly snipped chives

  • 1/2 cup of The Hollywood Brown Derby Old Fashioned French Dressing (see recipe below)

  • Chicory and watercress sprigs for garnish

Method:

Chop all greens very fine and arrange in a salad bowl. Cut and dice all accompaniments to personal preference. Arrange all accompaniments in straight lines across the greens. Sprinkle chives and other garnishes on top. Pour salad dressing over salad and toss.

Salad Dressing Ingredients

  • 2 tablespoons of water

  • 2 tablespoons red wine vinegar

  • 1 tablespoon freshly squeezed lemon juice

  • 1/2 teaspoon Worcestershire sauce

  • 1/2 teaspoon salt, or to taste

  • 1/2 teaspoon minced garlic

  • 1/4 teaspoon of sugar

  • 1/8 teaspoon of freshly ground black pepper, or to taste

  • 1/8 teaspoon dry English mustard (can substitute fresh English mustard, if gluten free, or spicy brown mustard)

  • 1/3 cup vegetable oil

  • 2 tablespoons extra virgin olive oil

Makes 1/2 cup

Method:

Blend all ingredients except oils, then add olive oil and salad oils and mix well. Place on top of salad and mix well upon serving.
